Een gedurfde variant van de bescheiden miso-smaak, die we hebben getransformeerd met een vleugje pit en een flinke dosis umami. Onze spicy red miso is uitgesproken en vol van smaak, maar toch gebalanceerd en zacht.
The heat creeps up slowly after the first slurp, but the smooth, funky umami keeps it from ever being harsh. I added a soft egg and it soaked up that thick, balanced broth perfectly.
That funky kick of the red miso hits right after the heat, but it stays silky and balanced instead of turning harsh. I finished the whole bowl and actually saved the broth to sip on its own.
The broth is surprisingly smooth for how much heat it carries, and that funky miso depth really comes through without being harsh. I threw in some soft egg and corn and it was the perfect cozy, spicy bowl for a cold evening.
